Today, today is a beautiful day! Even rainy days can be beautiful. It’s a mindset.   School is out for my boys and myself. It is the magical time of summer vacation. I love this time of year to sit back and watch things grow. Watch my boys grow, my garden grow and also watch all the excitement of summer… well,  grow. Skillet Fajitas for #WeekdaySupper

It is almost back to school time at my house. Baseball has ended, but football season is just kicking off. What my family needs are quick, easy, tasty meals that we can share during the week. #SundaySupper begins as a weekly event, but you see,  it soon turns into an everyday event. In my household, we enjoy our meal times. I prefer to cook instead of ordering take out or stopping for fast food. I believe in using fresh ingredients to make the best meals for my husband and children. My husband works the night shift and I work days, so throughout the week, we are opposites for everything. Dinner time is the one meal that we as a family can all sit down together. It is the time of day that we can talk about our days, plans, generally just what is going on in our world.
