The month of February is Heart Health month. People are wearing red and spreading awareness for heart disease. Eating healthy meals is one of the ways to help combat this disease. February is also the month that I am officially over snow and being cooped up indoors eating casseroles. Two weeks… that is all we really have left of Summer Vacation. Two short little weeks. . . I can hear the panic in my kids voices as they count down the days. My boys are a mix of excitement. No one likes the early mornings or the homework, but they like most of their classes, love playing sports and generally all the social aspects of school. This year, I have been trying to stay away from highly processed foods. This has asked me to get creative with ingredients. Stepping out of my comfort zone of rice or even quinoa, and try new things. Grains, Carbs, they can get a bad reputation in my opinion, but I like my grains and so I need to be more adventurous when I use them. My new grain of choice… Barley. Today, today is a beautiful day! Even rainy days can be beautiful. It’s a mindset. School is out for my boys and myself. It is the magical time of summer vacation. I love this time of year to sit back and watch things grow. Watch my boys grow, my garden grow and also watch all the excitement of summer… well, grow. Each day brings new and exciting possibilities and with family and friends about, how can you not be excited for all that Summer has to offer?!
The birds are chirping and we finally have green… green grass, green leaves and my favorite part green in my garden. This past winter was incredibly long. I was beginning to believe Spring was never going to come knocking on our door.
This week, #SundaySupper, is all about meals that have 5 ingredients or less. There are some freebie ingredients such as salt, pepper, oil… but for the most part, the meals that are featured contain only 5 ingredients. This was a really fun challenge. Meals have a way of bringing people closer together. There is nothing like a large gathering of family and friends. Enticing smells wafting through the house are a beacon to the kitchen. There may be someone sneaking a taste or simply wondering when dinner will be ready. More often than not, the kitchen trespassers stick around for conversation. At my home, the kitchen is definitely the heart of our home. We gather around our small island or lean against a counter while just enjoying being together.
This week’s #SundaySupper theme is Reflections and Resolutions. Fitting right? It is that time of year when we sit down and reflect on the year that has passed and set resolutions/goals for the new year ahead. For me, this past year has been filled with many new and exciting things. 2013 has been a year of transitions. I accepted a new position with the school district that I work for. It has been a wonderful experience and I am truly thankful for it, but it also cemented the end of my role as a stay at home mom. My oldest has gone off to high school. This is still strange to me. My baby will be in middle school next year. This Christmas was the first year in my life as a mother, where there were more clothes and shoes under the tree than toys.
