Skillet Fajitas for #WeekdaySupper

It is almost back to school time at my house. Baseball has ended, but football season is just kicking off. What my family needs are quick, easy, tasty meals that we can share during the week. #SundaySupper begins as a weekly event, but you see,  it soon turns into an everyday event. We look forward to family meals at the table.  Taco nights are big at my house, but I wanted something more. I decided to make skillet fajitas with my own spice blend. Happy Monday!

I have to share my lunch story with you today. It has been cold and snowy these last few days. Last night, rain moved in and quickly froze, leaving the roads a mess and no school for the kids or me today. Home, with hungry kids, means trouble in the kitchen.  After feeding them french toast for breakfast, soup and sandwiches for lunch, I was starving myself. Out of bread, I set about thinking what can I do with some eggs.
