Stuffed Baby Sweet Peppers for Recipe Countdown 2013

What a week it has been. This Christmas season seems so much shorter than in the past. We hung lights in our windows just last night. I love the glow of the Christmas lights. If we hung lights up all year, would they lose their magic? Perhaps…   To continue on with my Recipe Countdown of 2013… Wooo Hooo, Que the marching band… I am sharing my recipe for Stuffed Baby Sweet Peppers. These are a perfect appetizer for all the holiday festivities or for a fun lunch. I originally posted them for a #SundaySupper Labor Day party. They have been a hit on pinterest. The flavors are so fresh, you just can’t go wrong. The original post you can find here.

Stuffed Baby Sweet Peppers

  • Baby Sweet Peppers (Top cut off and seeded)
  • Whipped Cream Cheese
  • Cucumber (julienned)
  • Carrots (julienned)
  • Chives
  • Green Onion (just the green scallion part is needed)
  • Fresh Cracked Pepper
  • Salt (to taste...I do not add any additional salt, but that is a preference choice)

Step 1
Chop your veggies and prepare to stuff your peppers. Mix the cream cheese, chives, scallions and fresh cracked black pepper.
Step 2
Using the whipped cream cheese, makes the stuffing of the peppers a bit easier. I first pipe in the cream cheese,
Step 3
Then add in the julienned veggies.
Step 4
They are ready to serve as soon as you have them stuffed or chill until your event.
