Spinach and Goat Cheese Quesadilla for #WeekdaySupper

In my household, we enjoy our meal times. I prefer to cook instead of ordering take out or stopping for fast food. I believe in using fresh ingredients to make the best meals for my husband and children. My husband works the night shift and I work days, so throughout the week, we are opposites for everything. Dinner time is the one meal that we as a family can all sit down together. It is the time of day that we can talk about our days, plans, generally just what is going on in our world. We may not always sit down at the table, but you will find us sharing a daily meal, even if it is off the kitchen island, on tv trays or in our dining room.

#SundaySupper started as a once a week thing that I participated in and shared, but quickly that turned into a way of life. Today, I am sharing a quick meatless meal that we like to make for a  #WeekdaySupper. As a busy sports mom, this is something that I can wrap up and take to a game if need be, but they are usually eaten as fast as I can get them out of the skillet. Whether you are enjoying a Meatless Monday or a Meat Free Friday during Lent, this Quesadilla is a great choice.

Spinach and Goat Cheese Quesadilla for #WeekdaySupper

Dietary Vegetarian

Ingredients

  • 1 packet Large Flour Tortillas
  • 1 cup Baby Spinach (Coarsely Chopped )
  • 3 Green Onions (Whites and greens, chopped)
  • 1 Yellow Bell Pepper (Diced)
  • 2 Portabella Mushrooms (chopped )
  • Extra Virgin Olive Oil (for sauteing your veggies)
  • 5oz Goat Cheese (I used Garlic and Herb Goat Cheese)

Directions

Step 1
In your skillet, drizzle your Extra Virgin Olive Oil and begin to saute your White Onions, peppers and mushrooms.
Step 2
When the veggies are tender, add the spinach and stir for just a minute. Then set aside the veggies.
Step 3
To your hot skillet add in a tortilla. Top this with some of the veggie mixture and some of your goat cheese. Fold the tortilla in half and brown on both sides. This happens pretty quickly in a hot skillet. The goat cheese is soft to begin with so it does heat through pretty quickly.
Step 4
Serve... I served mine with some re-fried vegetarian Black Beans that I topped with golden tomatoes and green onions. I also sliced half of an avocado to serve along side of the Quesadilla.

    Secondly your got cheese and spinach quesadilla looks like a perfect treat some time during the week. I ll introduce it quietly to my husband (he is difficult with food you know). I feel he will like it, alone just because its stuffed with proteins.

  3. I’m wondering why I have never thought of this before! These are my favorite flavors. My husband isn’t really a fan of bell peppers, but he will eat roasted red peppers so I’m thinking swaping out the yellow peppers for roasted peppers would be perfect.
