Watermelon, Avocado and Red Onion Salad


  • 2 cups Watermelon (Cubed)
  • 1 Red Onion (Finely sliced)
  • 1 Avocado (cubed)
  • 2 tablespoons Red Wine Vinegar
  • 1 heaped teaspoon Olive Oil
  • Salt and Pepper to taste


Step 1
In a bowl, add your finely sliced red onion and toss with the red wine vinegar and olive oil. Set this aside to marinate. 5 to 10 minutes is enough time to add the acidity and flavor to the onion.
Step 2
Cube your watermelon and avocado
Step 3
In a separate bowl, add the watermelon, avocado and the marinated onions. Toss together and salt and pepper to taste.
Step 4
This should be eaten right away. If making ahead, you can squeeze lemon juice onto the avocado to help prevent browning.
