Pancetta & Goat Cheese Crostini

Ingredients

  • 1 Baguette (sliced into 1/4 inch thick rounds or on an angle)
  • 1/4lb Pancetta
  • 16oz Goat Cheese
  • 1/2 cup Kalamata Olives
  • 3 radishes (sliced thinly)
  • Basil (leaves sliced into ribbons for garnishing)
  • pinch kosher salt
  • pinch fresh cracked black pepper

Directions

Step 1
I begin this simple dish with pan frying the pancetta.
Step 2
Once your pancetta is crispy, Remove and let drain on a paper towel. Save the fat in the pan.
Step 3
To your slices of bread, Brush with the Pancetta dripping and toast on a cookie sheet at 375F. This takes around 10 minutes to be golden brown but keep an eye on them to watch for burning.
Step 4
Into a bowl, I add the goat cheese and the salt and pepper. Mix well to incorporate the flavors. Add more salt and pepper to taste.
Step 5
Time to assemble the Crostini. To each toast, spread a layer of goat cheese. Next, add crumbles of pancetta, thinly sliced radishes and olives and to finish top with basil ribbons.
