Meatball Sub Sliders for #SundaySupper

Meatball Sub Sliders with homemade dough. Perfect for a tailgate or any other party.


  • 2 cups All Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt (I used Kosher)
  • 1/2 stick Butter (Unsalted... and Cold)
  • 1 cup Milk (I used 2%...Keep it Cold )
  • Fresh Ground Black Pepper (To taste)
  • 2 cups All Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt (I used Kosher)
  • 1/2 stick Butter (Unsalted)
  • 1 cup Milk (I used 2%)
  • Fresh Ground Black Pepper (To taste)
  • 8oz Ground Pork Sausage
  • 8oz Ground Beef (I used ground sirloin)
  • 2 tablespoons Parmesan Cheese
  • 2 tablespoons bread crumbs (I used Ritz Cracker Crumbs)
  • 1 Egg
  • Olive oil for Browning meatballs
  • Shredded Cheese (As much as you want to add)
  • Italian Red Sauce (I made my own but you can use a jar sauce to save time)


Step 1
Making the Dough... Combine the Flour, Baking Powder and Salt in a bowl. Mix together. Next, "Cut In" the cold butter. Once you have a crumbly texture you can begin to add in your cold milk. Mix this until you have a ball of dough to work with. Knead for a minute but you do not need to over work this simple dough. I let the dough rest in the refrigerator while I prepare the meatballs... When it is time to assembly, I roll the dough out and cut into rounds. Press them thin.
Step 2
Making the Meatballs... Combine the Pork, Beef, Parmesan Cheese, Bread Crumbs and Eggs into a bowl. mix well. Begin to form these into mini meatballs. Smaller than a golf ball size. Next, brown them in a skillet filled with some olive oil. After Browning, move the meatballs to a pan with an Italian Red Sauce to simmer for 15 minutes to half an hour. This step is to infuse the flavors together in both the meatball and the sauce. If you are pressed for time simmer for the shorter period. Also, you can use a jar of Marinara to cut down on time if you would like. I make my own and you can find my recipe for sauce here...
Step 3
Assembling the Sliders... Once you have simmered the meatballs in the sauce it is time to ... assemble your sliders. Place shredded cheese in the middle of your flattened dough. Next, on top of the cheese add a meatball and some sauce. Then carefully fold the dough over and pinch the ends together to seal the dough.
Step 4
Finally, after all of your Sliders have been assembled, bake them on a baking sheet at 350F for approximately 20 to 25 minutes. The dough will turn a nice golden brown. I serve these with the remaining Red Sauce as a dipping sauce.
