Super Bowl Sunday… It evokes such imagery for me. The big game, the friends, family, food and we can’t forget the funny commercials. All of this is what makes Super Bowl Sunday so much fun. We are a sports family, baseball and football seasons are followed closely. We have watched all the games, rooted for the home team and then our next favorites and so on until it has come to this epic match-up. The Coaches of these teams are brothers. My boys have had intense discussions of what that will be like for them one day. Oh, and mark their words, it could totally happen to them.

Regardless of which team you are rooting for, no home team to cheer on for me, you need snacks to get through this battle. The #SundaySupper crew has been hard at work planning and organizing tasty treats for the party. My contribution to this is Meatball Sub Sliders.  To be honest, these mini meatball subs are wrapped in a biscuit like dough, much like another Michigan favorite…the Pastie. They also use my Italian Red Sauce in the recipe as well as a condiment.

Meatball Sub Sliders for #SundaySupper

Meal type Appetizer, Lunch, Snack, Starter
Meatball Sub Sliders with homemade dough. Perfect for a tailgate or any other party.

Ingredients

  • 2 cups All Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt (I used Kosher)
  • 1/2 stick Butter (Unsalted... and Cold)
  • 1 cup Milk (I used 2%...Keep it Cold )
  • Fresh Ground Black Pepper (To taste)
  • 2 cups All Purpose Flour
  • 1 tablespoon Baking Powder
  • 1 teaspoon Salt (I used Kosher)
  • 1/2 stick Butter (Unsalted)
  • 1 cup Milk (I used 2%)
  • Fresh Ground Black Pepper (To taste)
  • 8oz Ground Pork Sausage
  • 8oz Ground Beef (I used ground sirloin)
  • 2 tablespoons Parmesan Cheese
  • 2 tablespoons bread crumbs (I used Ritz Cracker Crumbs)
  • 1 Egg
  • Olive oil for Browning meatballs
  • Shredded Cheese (As much as you want to add)
  • Italian Red Sauce (I made my own but you can use a jar sauce to save time)

Directions

Step 1
Meatballs 2
Making the Dough... Combine the Flour, Baking Powder and Salt in a bowl. Mix together. Next, "Cut In" the cold butter. Once you have a crumbly texture you can begin to add in your cold milk. Mix this until you have a ball of dough to work with. Knead for a minute but you do not need to over work this simple dough. I let the dough rest in the refrigerator while I prepare the meatballs... When it is time to assembly, I roll the dough out and cut into rounds. Press them thin.
Step 2
Meatballs 1
Making the Meatballs... Combine the Pork, Beef, Parmesan Cheese, Bread Crumbs and Eggs into a bowl. mix well. Begin to form these into mini meatballs. Smaller than a golf ball size. Next, brown them in a skillet filled with some olive oil. After Browning, move the meatballs to a pan with an Italian Red Sauce to simmer for 15 minutes to half an hour. This step is to infuse the flavors together in both the meatball and the sauce. If you are pressed for time simmer for the shorter period. Also, you can use a jar of Marinara to cut down on time if you would like. I make my own and you can find my recipe for sauce here... http://countrygirlinthevillage.blogspot.com/2012/12/sundaysupper-celebrity-chef.html
Step 3
Meatballs 3
Assembling the Sliders... Once you have simmered the meatballs in the sauce it is time to ... assemble your sliders. Place shredded cheese in the middle of your flattened dough. Next, on top of the cheese add a meatball and some sauce. Then carefully fold the dough over and pinch the ends together to seal the dough.
Step 4
Finally, after all of your Sliders have been assembled, bake them on a baking sheet at 350F for approximately 20 to 25 minutes. The dough will turn a nice golden brown. I serve these with the remaining Red Sauce as a dipping sauce.

Whatever your plans are for the Super Bowl, staying home, going out or not watching it at all, be sure

Clearly I don’t know what a real slider is because I thought it was just a tiny hamburger and, so, was never impressed. These look great! Love the combination of beef and pork in your meatball too.

    • 2-3-2013

Thank you! I may have been playing liberal with the slider take… here those are usually small burgers : )

I love meatball subs but I make a giant mess when I’m eating them. Meatballs go rolling out all over. Now these are a great solution. I’m sure I can manage to eat these without spilling. Great little sliders for a party!

    • 2-3-2013

Oh no! Those tricky things. lol IT is a nice pocket to hold and eat. The dough holds up well with the sauce.

  21. 2-4-2013

I love that you wrapped the dough around the meatball instead of just using a bun. I will def need to try these for a fun Friday night dinner.

  22. 2-4-2013

Real size meatball subs can be such gut bombs. These those, are the perfect size and then after you’ve had one, then you can decide if you need to stuff yourself on the second (or third) one. :-)

    • 2-4-2013

Thank you! One was good for me to feel like I indulged in the cheesy doughy goodness but not feel weighted down by a heavy sub. Now, my boys…they were another story. lol

  23. 2-4-2013

    What a delicious recipe!

  24. 2-4-2013

    Meatball pockets sound delicious!

    • 2-4-2013

  25. 2-6-2013

Mmmmmm, in NJ, this would be a calzone! Yum!

  26. 2-7-2013

ooh, these look lovely. All baked in nicely ! No mess dinner :) ! Must try it at home !

  27. 2-10-2013

Oh I haven’t had a meatball sub in so long. I don’t know why I never thought to make it homemade, I bet it is even better.
