First Day of Spring…and Taco Cups

Today is the first official day of Spring.  If I was judging by the weather, I would not believe it, however it is almost 7:30 pm and it is still very much light outside. Yay to longer days!

What are your plans for this Spring? We are planning on extending our chicken coop. I have a brilliant idea for skylights. They seem to need a little more light in the coop. Their windows are on 2 sides only and at this house, it just seems like it is not enough. We are also putting in raised beds for our garden. The first year at our new house and my very large garden was decimated by rabbits. True to all Old Wives Tales, the rabbits ate every last thing in what seemed to be a swarm of biblical locusts proportions.

With all this planning for gardens and chicken coops, I am busy pouring over seed and chicken catalogs I wanted a quick and easy meal to feed my family tonight. I made Taco Cups. They were awesome and super simple. What more can a Spring Fever survivor need?

Taco Cups! A simple, quick recipe that the kids thought was fun too… Taco Cup 4

Taco Cups

Ingredients

  • 1/2lb Ground Beef (I used a 90/10 ground sirloin)
  • 6 White Corn Tortillas (you could use yellow)
  • 1 packet Taco Seasoning
  • Fresh grated Sharp Cheddar Cheese
  • 2 cups shredded lettuce
  • 1 cup diced fresh tomatoes
  • sour cream (optional but I like it to top the cups)

Directions

Step 1
Brown your ground beef in a skillet
Step 2
Once browned, drain the beef and mix in taco seasoning and water as directed. While this coming together you can cut your tortillas into quarters.
Step 3
Place 2 tortilla quarter into a muffin tin. Be sure to over lap the tortillas. This is where your cup forms.
Step 4
Add a tablespoon of meat to the middle of each cup
Step 5
Bake in the oven at 400F for 8 to 12 minutes or until the cups have toasted.
Step 6
Dress your taco cups by adding the cheese, lettuce, tomatoes and whatever other toppings you might like. They are pretty versatile.
