Happy Monday!

I have to share my lunch story with you today. It has been cold and snowy these last few days. Last night, rain moved in and quickly froze, leaving the roads a mess and no school for the kids or me today. Home, with hungry kids, means trouble in the kitchen.  After feeding them french toast for breakfast, soup and sandwiches for lunch, I was starving myself. Out of bread, I set about thinking what can I do with some eggs.

I combed through Pinterest and found many posts on cooking eggs in Avocado boats, my favorite is here Pinterest . Bam! That is what I wanted for lunch and I even had 1 lonely avocado. The Pinned Website called for foil boats for the avocado to baked in, I used a muffin tin.

a359e3aa746c11e28fa722000a1fbcea_6I placed each avocado in a tin. Scooped a little bit extra out of the hole leftover from removing the pit. Next, I used 1 slice of bacon cut in half  and added the half slice to each avocado, because bacon really does make everything better. Then I cracked an egg in the hole of each avocado half. Salt and peppered to taste. I put them in a preheated 375F oven. I let these bake for about 10 minutes and noticed on mine, the egg white were just starting to set.  I decided to switch off the oven and broiled the boats for about 2-3 minutes. This finished them perfectly.

      It was sooo good. And, if someone was looking for a meatless meal, just omit the bacon. Yum!

    Yum! We will have to try this the next time we get avocados. Such a simple recipe, but so much flavor!
