We love pancakes at my house. They are a great way to kick off a Saturday. Easy to whip together and fill bellies for a while. Today was no exception. My boys had friends over for the night so I had extra bellies to fill. Pancakes it was. My youngest loves all things carrot cake and for special days, he always requests carrot cake pancakes. They had been on my mind, but I wanted to try something else. Today, I experiments and fell in love with Apple Pie Pancakes. Yumm-o!

First, I had to make up some Apple Pie Sauce. I use the “juice” of the sauce in each pancake and top the finished pancakes with the apples and more of the saucy part. This gives the pancake the apple pie flavor throughout. Yum!

Apple Pie Sauce for Pancakes

Ingredients

  • 2 Large Apples (Sliced)
  • 1 teaspoon Vanilla Extract
  • 3 heaped teaspoons Light Brown Sugar
  • 1 teaspoon white sugar
  • 1/4 teaspoon Corn Startch
  • 1 tablespoon Cinnamon (ground)
  • 1/4 teaspoon Ginger (ground)
  • 1/4 teaspoon Nutmeg (ground)
  • 1/8 teaspoon All Spice (ground)
  • 1/8 teaspoon Salt

Directions

Step 1
Into a non-reactive pot, combine all ingredients and slowly bring up to a boil.
Step 2
Let the sugars boil for about 2 to 4 minutes until the sugar caramelize and thickens. Be careful not to burn the sugars. Stir frequently.
Step 3
Once the apples and sauce have thickens, remove from heat at set aside.

You could probably get away with pouring that apple pie sauce on just about everything. I am thinking ice cream already. Another bonus, the house smells awesome from the apples and spices.

Apple Pie Pancakes

Ingredients

  • 2 1/2 cups All Purpose Flour
  • 1/4 cup Sugar
  • 1/2 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 1-2 cup Milk
  • 2 Eggs
  • Apple Pie Filling (*See Recipe*)
  • Carmel (For a Drizzling Finish)

Directions

Step 1
First, combine your dry ingredients and mix well
Step 2
To that, add your vanilla extract and eggs.
Step 3
Next, stir in your milk. Take care to add a little at a time so that you can adjust for the thickness of batter. I prefer to work with a thicker batter, however, you can adjust to your taste.
Step 4
Pour pancake batter into a greased skillet or onto a griddle.

Next, spoon some of the sauce (just the juice part) onto the pancake.
Step 6
Flip the pancake to cook the other side.
Step 7
Repeat for as many pancakes as you plan to make.

Next, top the pancakes with apples and sauce. Serve. I like to drizzle a bit of caramel on top too.

There you have it my friends. Apple Pie Pancakes. They are out of this world good. Definitely a keeper to break out on these cold mornings.

I wish I had more pictures, but as I was making them the kids were eating them and I had 2 chickens escape the run and were running into the fence over and over trying to get back in. I do not clip their wings. They could have just flown/hopped back over the fence, but these ladies are not too bright and instead just run into the fence, back up and run again. I had to go open the gate for them. Wouldn’t life be boring without chickens?
