Stuffed Poblano Peppers for Cinco de Mayo #SundaySupper
The 5th of May, or more popularly known as Cinco de Mayo, is the day for celebrating the Mexican Armies’ victory over the invading French Army in the Battle of Puebla. It is popular in the United States as a way to commemorate the battle but also as a day of Mexican Culture and Heritage. This week’s theme centers around these celebrations and is hosted by #SundaySupper’s Jen at Juanita’s Cocina . This week’s theme for #SundaySupper is Movie Inspired Dishes hosted by the ever talented Heather at Girlichef . My family loves movies, from my husband to my sons we have fans from all the movie genres at my house. Did anyone notice that I left myself out of that last sentence? I did, I have to admit… My name is Shannon and I do not watch movies. Isn’t that awful? I have always been a reader and rarely sit down to watch a movie. The boys can pop on a movie and I can read my book and we are all happy. Date night with my husband? I would rather catch a Detroit Tigers Game, but I do sit through the occasional movie for him. With my lack of Movie knowledge, I was worried about this theme. What would I make, did I even know a movie that would inspire my taste buds?
Asparagus and Spring Onion Frittata for #SundaySupper
This Week’s theme for #SundaySupper is Springtime dishes. This was a hard one for me. Living in Michigan, Springtime has not quite yet hit our area. We went to bed with the temps lingering around 30F and woke up to a blanket of fresh snow. The Chill in the air tells us that we are still in Winter’s grip but the longer days are telling us another story, the sun shines longer and there is hope that Springtime is around the corner.

It’s a brisk but beautiful day in Michigan this October morning. The chickens are enjoying the sun and I started my morning off with a good cup of coffee. Then inspiration hit me, what was I going to make for breakfast. This Unprocessed October has been a challenge to me in that I have to plan more of what we eat so I do not fall into a trap of just getting something from a box in the freezer. So instead, this morning, I surveyed my kitchen and decided to use a loaf of starting to stale bread, fresh eggs and my homemade vanilla extract and make up a pan of baked French Toast.

While on Twitter, I read a tweet about a challenge a blogger had thrown out for the month of October. Blogger Andrew Wilder, at Eating Rules, http://www.eatingrules.com/october-unprocessed-2012/thanks/?id=6722 , proposes that people sign up and take the jump into eating only unprocessed foods for an entire month. This idea completely intrigues me. I try to eat mostly unprocessed foods as it is, but maybe there is more I can do.
