This #SundaySupper is all about skinny eating, making healthy recipes to share with family and friends. The team has been hard at work making some great recipes to share with everyone. For my contribution, I decided to go with lamb. I am very lucky to have a wonderful Butcher Shop, Snooks & Colasanti’s, not far from my home. They have an awesome selection of different meats available and American produced Lamb is one of them. Lamb is not as widely consumed in the USA as it is in other regions of the world. That is a shame. It is a wonderful meat and us
ed throughout the Mediterranean, which is known for healthy eating. Lamb is a good source of Omega-3 and Omega-6 fats, Mineral Zinc as well as Vitamin B12.
For my Burger, I decided to bulk up the vitamins by adding spinach and Feta cheese to the meat before cooking. Also, do to the leanness of the meat, I was liberal with the olive oil when cooking in my cast iron skillet. For a side, I made a refreshing Watermelon, Avocado and Red Onion Salad.
Lamb Florentine Burger
Ingredients
- 1lb Ground Lamb
- 1 cup Fresh Baby Spinach (finely chopped)
- 1/4 cup Feta Cheese (crumbled)
- 1 teaspoon Fresh Dill
- Olive Oil (to coat pan for cooking)
- Salt and Pepper to taste
Directions
The Burger is great and versatile enough to be topped with anything, but for this one I like a Greek Tzatziki sauce. The creamy cucumber and dill sauce really compliments the lamb.
Tzatziki Sauce
Ingredients
- 1 teaspoon Fresh Dill
- 1/4 Lemon (This is for squeezing into the sauce. )
- Salt and Pepper to taste
- 4oz Greek Yogurt Plain
- 1 Cucumber
Directions
| Step 1 | |
| Scoop your yogurt into a bowl | |
| Step 2 | |
| Grate half of the cucumber into the yogurt. For the other half, finely dice and mix into the yogurt. | |
| Step 3 | |
| Add the Fresh Dill and squeeze of lemon into the yogurt mixture. Mix all the ingredients well. After all is mixes, salt and pepper to taste. | |
With such a great burger, I decided to pair it with the Watermelon, Avocado and Red Onion Salad. The marinated onions add an acidity to the sweetness of the watermelon that is all complimented with the creamy avocado. It is a perfect side for just about anything.
Watermelon, Avocado and Red Onion Salad
Ingredients
- 2 cups Watermelon (Cubed)
- 1 Red Onion (Finely sliced)
- 1 Avocado (cubed)
- 2 tablespoons Red Wine Vinegar
- 1 heaped teaspoon Olive Oil
- Salt and Pepper to taste
Directions
| Step 1 | |
| In a bowl, add your finely sliced red onion and toss with the red wine vinegar and olive oil. Set this aside to marinate. 5 to 10 minutes is enough time to add the acidity and flavor to the onion. | |

| Cube your watermelon and avocado | |
| Step 3 | |
| In a separate bowl, add the watermelon, avocado and the marinated onions. Toss together and salt and pepper to taste. | |
| Step 4 | |
| This should be eaten right away. If making ahead, you can squeeze lemon juice onto the avocado to help prevent browning. | |

The flavors are hard to beat in Greek cooking. I love the simplicity but intense flavors. I could probably live on feta and olives.

The Husband would love the lamb burgers and I’d love the salad and tzatziki. What a fresh, healthy meal this is! And thank goodness for good butchers. We used to buy our meats packaged at the grocery store but ever since switching to a butcher, we’ve noticed a huge difference in the taste and freshness.
It does make a big difference. Im glad it isn’t just me who thinks that.

You could probably substitute Bison for the same effect. lol Shoot, spinach and feta are good with anything, even lettuce.

The salad is just awesome! I know the idea of onion and watermelon may sound “off” to some but I swear it was fantastic. The red wine vinegar on the onions really makes it.

As a kid in London (UK) we used to have lamb. It was awesome – especially when my mom curried it. I haven’t had it ground before but I should as I really like the flavour. This burger looks absolutely delicious and the salad pairs wonderfully! Very nice, Shannon!

Fantastic! I love the addition of spinach and feta to the burger! We eat a lot of venison, when the hubby has a good hunting year, and we love how lean that meat is. But, we’ve only ever had lamb in gyros. I’d love to experiment with it!
