Valentine’s Day, a Holiday of love and affection to commemorate a martyred Saint or a Pagan Holiday of Fertility. Either way, it is a welcome excuse to give my husband and boys, frilly cards and treats. I enjoy cooking…that may not be a shock right there I know, but I really do like cooking for my family so it is fun for me too. Win Win right?
My Husband is not so much of a big sweets eater and neither are my boys really, however, I am. I mean, who doesn’t like sweets? In order to make them something that they would enjoy and I could satisfy my sweet tooth too, I set about to make Chocolate Covered Strawberries Stuffed with a Greek Yogurt and Mascarpone Cheese Mix. The Greek Yogurt replaced my normal cream cheese filling yet mixed with the Mascarpone cheese; you still had a thick, creamy filling to pair with the milk and dark chocolates. Of course I used both. Once I was on a roll there was no turning back right? Also, I learned that dipping the strawberries in chocolate and letting them cool was much easier to stuff than holding a stuffed strawberry above a double boiler of chocolate.

Ingredients
- 12 or More Strawberries (large enough to be cored for stuffing)
- 2 Hershey Chocolate Bars
- 2 Hershey Special Dark Bars
- 1 cup Mascarpone Cheese
- 5.3oz Vanilla Flavor Greek Yogurt ( This was 1 individual serving package of the yogurt)
Directions
These little morsels of goodness really were decadent and sweet but not too sweet. The Greek Yogurt mixed well with the Mascarpone Cheese to make a substantial filling with minimal ingredients. I do not have a single one left so they were approved by boys and Husband alike. Ok, I ate a few too. I had too. Can you blame me?

Oh what this looks amazing. I would be happy with just the chocolate covered strawberries but that stuffing sounds amazing.
I love just the dipped ones too. But, this filling is really good and not over powering sweet.

Great idea, Shannon! Combining mascarpone with Greek yogurt would be a perfect contrast for the sweet chocolates and strawberries. Love the visual of your son grabbing one as soon as it was made. Kids don’t lie (about food) so that is high praise indeed.
